Nor'easter Cocktail

Serves 1

INGREDIENTS
2 ounces bourbon
1/2 ounce lime juice
1/2 ounce maple syrup
Ginger beer

INSTRUCTIONS
In a cocktail shaker filled with ice, combine the bourbon, lime juice and maple syrup. Shake and strain into a rocks glass with ice. Top with ginger beer.

Chai Tea

I'm always on the look out for an authentic Chai Tea recipe While this one definitely sounds good, I'm dubious about it coming any where near what we had in India. Pretty sure I'll never get that wonderful, oily skim layer on the top.

Yields: 12

12 cups water 2 sticks cinnamon, broken in half
30 cardamom pods, crushed with a mallet
4 cloves 1 (2-inch) chunk fresh ginger (optional), thinly sliced
5 cups organic whole milk
1 can evaporated milk
8 black tea bags

Preparation
Fill a large pot with water. Add the cinnamon, cardamom, cloves and ginger and bring to a boil. Cover and turn the heat to low and simmer for about 10 minutes.Add the milk, evaporated milk and sugar and bring to a simmer again. Add the tea bags, cover, and turn off the heat. Let the tea steep for no more than 4 minutes otherwise the tea will release its acidity. Strain the tea and serve immediately. It should be hot and fragrant. I also like to add a dash of heavy cream (Don't feel guilty, just enjoy the creaminess) Serve with tea cakes or cookies. Time to relax and enjoy!

Cosmopolitan

1 part Grand Marinier
3 parts vodka
1 par cranberry juice
1 part fresh lime juice

Combine all ingredients in a shaker, add ice, shake and strain into a martini glass. Garnish with a lime swirl.

Choco-Coffee Frost

1 pint (2 cups) vanilla frozen yogurt, softened
1 1/2 cups coarsely crushed ice cubes
1/2 cup cold coffee
1/4 cup chocolate-flavored syrup
1 T sugar
1 t vanilla

In blender container, combine all ingredients; process until smooth. Pour into frosted glasses. Serve immediately. 4 (3/4 cup) servings.

Strawberry Margarita Slush

1 (16 oz) pkg frozen whle strawberries
1 (12 oz) can frozen lemonade concentrate
1 (12 oz) can lemon-lime soda
1/3 cup sugar
1 1/2 cups tequila
2 T fresh lime juice
3 cups coarsely crushed ice cubes
2 1/2 cups lemon-lime soda

Prepare half of the recipe at a time. In blender containder, combine half of all ingredients except the 2 1/2 cups of soda; blend until smooth. Pour into nonmetal freezer container. REpeat with other half of ingredients. Cover container; freeze 3 to 4 hours or until icy, stirring twice.

To serve, stir mixture; spoon into 10 glasses. Top each serving with 1/4 cup carbonated beverage. 10 (1-cup) servings.

Cranberry Cream Punch

Cranberry Ice Ring (recipe, below) or ice cubes
1 (14 ounce) can sweetened condensed milk
1 (12 ounce) can frozen cranberry juice cocktail concentrate, thawed
1 cup cranberry-flavored liqueur (De Kuyper), optional (see note below)
Red food coloring, optional
2 (1 liter) bottles club soda or ginger ale, chilled
Fresh mint leaves, optional

Prepare and freeze cranberry ice ring.

At serving time, in punch bowl, combine sweetened condensed milk and cranberry concentrate. Stir in liqueur and food coloring if desired.

Just before serving, add club soda and Cranberry Ice Ring or ice cubes. Garnish with mint leaves if desired. Store leftovers covered in refrigerator. Makes about 32 servings.

Cranberry Ice Ring: Combine 2 cups cranberry juice cocktail and 1 1/2 cups water. Pour 1/2 cup of the cranberry juice mixture into 1 1/2 quart ring mold. Arrange 3/4 to 1 cup fresh cranberries and life slices and/or fresh mint leaves in mold; freeze. Refrigerate remaining cranberry juice mixture until mixture in mold is frozen. Pour remaining cranberry juice mixture into mold; freeze.

Tomato Zip

Mom used to make this at the holidays and serve in her Snowman punch bowl.

2 cans (46 oz each) tomato juice
4 cans tomato soup
2 cans water
1/2 c lemon juice
2 T sugar
2 T worcesteshire sauce

Combine and heat slowly - just to boiling. Garnish with parsley and serve hot.

Cranberry Tea

Jerry's favorite drink - well, after beer...

4 c boiling water
1-2 c sugar (I use one cup)
1/2 c red hots
6 whole cloves
6 oz frozen orange juice
4 c cranberry juice
6 oz can frozen lemonade
16 c water

Combine 4 cups of boiling water with sugar, red hots and cloves until dossolved. mix in other ingredients and heat. Serve hot or cold.

Ginger Juice

Ginger Juice

Ingredients:
1 Cup Lemon Juice
1.5 Cups Fresh Chopped Ginger
3 Cups Sugar
1.5 Cups Water

Method:
Liquidize the ginger and lemon juice and leave to marinate for 3-4 hours or overnight.
Melt together the water and sugar to make a syrup.
Add this to the ginger mix. I usually give another quick “zap” in the liquidizer.
Strain juice well.

To serve:
Use the concentrate like a squash. It will keep in the fridge for 3-4 weeks.
To your taste, add 2-3 tbsp. of the squash to a glass. Then fill the glass with water and ice.
Garnish with mint leaves and lemon slices.
Alternatively make a jug full.
Very refreshing and ginger is very healthy!
